Forecasting Demand of Beer at Rapscallion Brewery

Rapscallion Brewery faced a challenge with over and under producing certain types of seasonal beers. Rapscallion Brewery planned on increasing their brewing capacity. The purpose of our project was to provide Rapscallion Brewery with forecasts of their demand as well as simulate their new production capabilities with the planned increase in capacity. Using different methods of forecasting, we were able to predict the demand that Rapscallion has for their many beers. We then modeled Rapscallion’s brewing process with a discrete event simulator. We then applied their demand over multiple scenarios for production capacity and analyzed the results. We used our findings to give recommendations for Rapscallion Brewery that would allow them to optimize fermenting and brite tank utilization.
