Abstract

Winemaking in California has become very technologically advanced for the E.J. Gallo Winery. This Major Qualifying Project was undertaken in order to improve the efficiency of fermenter area operations and delivery of the product to the cellar tanks by reviewing all procedures, equipment, and operations. After all the necessary background has been obtained recommendations will be made to the Gallo Fresno staff and will include wine-process modification, equipment replacement, or process adjustment.
